SPRING SALAD
Red-leaf lettuce
Spinach
Red bell pepper - cut into small strips
Green onion - chopped into small pieces
Avocado - cut into bite-sized chunks
TIP: Pre-wash and bag as much lettuce as you think you'll eat over a few days. It's much easier to grab already-prepped salad for several meals than to prepare it each time.
DRESSING:
Fresh squeezed Lime or Lemon -- that's all you need! It tastes fabulous!
You could add other yummy items, such as apples, edamame, sunflower seeds, or shredded coconut, too.
CUCUMBER SOYBEAN SALAD
1 large cucumber - sliced
1 12-oz bag shelled edamame
a squeeze of lime
a pinch of thyme
TIP: Make a large quantity, and store it in a glass jar for several uses. What type of glass jar? If you don't have Mason jars, reuse an old pasta sauce jar, or a peanut butter jar, or a pickle jar!
