RAW FUDGE
1/4 C coconut butter
1/4 C coconut oil
1/2 C cacao powder
6-8 dates, pitted and soaked in water
splash of sea salt
1/4 C chopped cashews
1/4 C chopped almonds
splash of vanilla
raw cacao nibs (optional)
Blend the cashews and almonds in a food processor. Take the dates out of the water, and save the water. Add all of the ingredients, except for the raw cacao nibs, to the food processor. Add some date water as needed to blend. This will be thick.
Take a test taste and add whatever it needs at this point. Blend again. Press into a glass dish, and if you'd like, sprinkle raw cacao nibs on top. Place in fridge and let it set for an hour or so.
